When I was growing up and my mother would notice some apples sitting in the fridge too long, she would throw them in the oven and bake them.
We loved them!
They were crispy on the outside and warm and soft on the inside.
I decided to try it out, and after trying it a few times, I came out with this winning recipe:
Baked Apple Recipe
I use large empire, Rome, Cortland, or macintosh apples, but you could really use any type.
Directions:
1) Wash the apples
2) Cut the skin off the top
3) This is the hard part: Core them through the center taking out as many of the pits as you can, leaving the bottom a few inches thick so it won’t split apart.
4) Pour honey into the center along with some cinnamon and nutmeg.
5) Put them in a pan and fill the bottom with 1″ water.
6) Bake it uncovered at 365 for 1 1/2 hours.
The water on bottom will become candied around the apples, giving the outside a delicious coating.
I love that we can have a treat that is delicious and healthy, as well as treat the kids with it!
